Last week we talked about the delicious flavors of fall(winter) squash, and today we are going to get cooking with some of those flavors!  This grilled Butternut Squash recipe is quick, easy, and most importantly, delicious! Give it a try tonight!


Grilled Butternut Squash – 2 Ways!

One 3 pound Squash is about 6 servings.

1 medium butternut squash (about 3 pounds)
1 tablespoon olive oil
1-1/2 teaspoons dried oregano
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon pepper

Peel and cut squash crosswise into 1/2-in.-thick slices; remove and discard seeds. In a large bowl, toss squash with remaining ingredients. Grill, covered, over medium heat or broil 4 in. from heat 6-8 minutes on each side or until tender.

Squash can also be cut into 1in. cubes, tossed into oil and herb mixture, threaded onto skewers, and grilled over medium heat for 6-8 minutes, or until tender.
